Ingredients:
- 8 chicken drumsticks.
- 2 chicken breasts.
- Pot of Jerk seasoning.
- 3 Bottles of alcoholic ginger beer (Crabbies is easiest to find).
- Chicken Stock (I use OXO)
- Corn flour.
- Mushrooms.
- 2 Large Onions.
- Salt & Pepper.
- 2 Scotch bonnets.
- Fresh Garlic 2 cloves or 1 Large.
- Fresh Ginger Stem Large.
- 1 tin of Black eyed beans.
- 500 grams Sweet Potato (Yam’s)
Method:
- Start by chopping your chicken breast into fair sized chunks.
- Add chicken chunks and drumsticks in to a pan and fill with ginger beer so that the chicken is covered.
- Finely chop and add 1 scotch bonnet.
- Add chopped onions cut to preference.
- Grate and add Ginger.
- Finely chop and add Garlic.
- Add two level table spoons of Jerk Spice.
- Add 2 chicken stock cubes crumbled, salt and pepper to taste.
- Using pointy knife stab chicken several times whilst in marinade.
- Leave sit for 12-18 hours (longer if you like)
- Remove drumsticks and dust in cornflour.
- add chopped chunks of sweet potato (cut to your liking)
- Bring marinade to the boil.
- When waiting for marinade to boil gently brown outside of drumsticks on a gridle.
- Chop mushrooms and add to marinade.
- Add drumsticks to marinade turning to low heat and adding the rest of the ginger beer.
- Wait 4-6 hours for chicken to cook through.
- At this point taste and add additional seasoning if necessary.
- Remove half of the Sauce into another pan
- Slowly add cornflour and whisk or use hand blender off the heat until sauce thickens to a gravy like thickness.
- Re-add stirring in gravy like sauce.
- Leave on hob to heat through on low heat for a further hour.
- Sauce should’ve thickened to a nice gravy like thickness.
- Cook Rice with black-eyed beans per how many people you’re cooking for.
